Cupcakes and Muffins
Here is the recipe... for these chocolate cupcakes:
Ingredients:
100 grams softened butter
100 grams sugar
85 grams flour
15 grams cocoa powder
1 tsp baking powder
dash of salt
1tsp vanilla extract
2 eggs
Procedure:
Preheat oven to 350˚ F/ 180˚C
In a bowl of an electric mixer (or you can do it by hand), cream the butter and sugar until light and fluffy, add the vanilla extract and beat in the eggs, one at a time. In other bowl sift the flour, the baking powder, the cocoa powder and salt. Mix the flour mixture into the butter and sugar just until incorporated. Prepare small muffin tins and pour the mixture till 3/4 of the mold. Bake for about 20 minutes or until it comes back when lightly touched.
Frosting:
30 grams softened butter
40 grams cream cheese
85 grams confectioners sugar, sifted
1Tbsp cacao powder, sifted
1tsp vanilla extract
dash of salt
Beat the butter, vanilla extract and the cream cheese until smoth and fully incorporated, add the sifted sugar, the cacao powder and salt. If your batter is still too runny, you might as well add some more sifted sugar or take it to the refrigerator for a couple of minutes, so that it has some frosting consistency.
A personal note, I loved them like this but you could fill the cupcake with some raspberry puree or some white chocolate and orange ganache... just a thought... They are great for the afternoon tea. I hope you try it and like it. Let me know how that went.
